From the earliest days of Scratch Distillery, our friends at local wineries and breweries have shared their wares with us to see what comes out of the still. The result is a series of limited releases of Bier Schnaps, brandies, and other special spirits. Scratch Pride Club members get first access to these special projects. Not a member? Join now. Apple Brandy
91 Proof / 45.5% ABV / 750 mL
A field blend of Washington apples shine at 13 months in a once used Edmonds Own Whiskey barrel. No sugar added, naturally sweet from the apples, vanillins from the barrel, and hints of Edmonds Own. Fresh nose of apples and caramel, with a nice warmth across the palate. Delicious in our Zodiac cocktail.

Successes we’ve had
BREAKAWAY SPIRIT
We took the beautiful Breakaway IPA made by American Brewing Company and distilled it into a relatively unheard-of spirit that is shared among brewers in Germany: a Bier Schnaps. Scratch Breakaway Spirit is flavorful, full-bodied, and hoppy with a malty sweetness.
DIAMOND KNOT PEACH WIT
We love having the chance to collaborate with our local brewers to create unique products from their craft beers. We collaborated with Diamond Knot to distill Peach Wit, then we stored it in a once-used Bourbon barrel for 7 months.
SALISH SEA BREWING’S BIG CHOCOLATE LOVE
We distilled the delicious Salish Sea Porter into a spirit and let it sit in a neutral barrel for 1 year. Big Chocolate Love has a Northwest-y ESB on the nose and a chocolate and espresso finish. Perfect as a substitute for a chocolate liqueur in a cocktail to trade out intensity for sweetness. Also fantastic as a fragrant light whiskey, on the rocks. Want first access to products like this?
